Happy 4th of July - Here is Your Cocktail!

Cheers!

Dear Americans, I love your Independence Day. I got married to a fellow citizen of yours on this day two years ago. That guy is fantastic and your country is as well. Here comes a cocktail recipe for you today by that already mentioned American. Because as if he wasn't fabulous enough just breathing he also knows how to mix the best cocktails. Cheers!

For one cocktail put five mint leaves, a teaspoon of sugar and half a lime quartered into a lowball glass. Muddle, ad 10 cl cranberry juice, 4 cl vodka, 2 cl triple sec and some ice cubes. Stir and garnish with a mint twig and a maraschino cherry. Lay back and enjoy!

Cocktail Recipe: Arctic Breeze

Last night we had a friend over and Nate wanted to reproduce a cocktail of one of our favorite bars in Nuremberg. He remembered all ingredients but couldn't remember the name of the drink. Neither could my friend and I... something with 'arctic' and 'breeze' in it. So that is what it has become: Arctic Breeze. Who cares about the name anyway. This stuff tastes good!

So geht's:

This is how it works:

Muddle 10 mint leafs, 5ml simple sirup and the juice of half a lime. Fill into a shaker, add some ice and shake briefly. Pour into a highball glass with ice cubes, fill up with ginger ale and garnish with a wedge of lime and a mint twig.

Couscous With Caramelized Red Onions and Prunes (Recipe For Two)

A few days ago Nate simply threw something together for dinner. At least that is what he told me. The outcome was one of the best things I have ever eaten. And I eat a lot. I call it Couscous with caramelized red onions and prunes. Luckily Nate gave me the recipe before he forgot it. He doesn't need it anymore. Next week he will have new ideas. Some are blessed to be good cooks, others are married to those.

It all starts of with some oil in a hot pan. Chop the red onion into rings, sweat those a bit in the pan and add the chopped prunes. After a few minutes magic happens and the onion rings caramelize (they get a brownish glaze)! It's time to add the walnuts and cook everything for a few more minutes. (Note: Of course you should add the walnuts without their shells but I did not manage to draw walnuts without shells. They kept looking like strange vaginas.) Remove from heat when done and set aside.

Pour 250ml couscous into a bowl. Mix in some salt and pepper, 1/2 teaspoon cumin, a heaped teaspoon smoked pimento and a heaped teaspoon freshly chopped cilantro. Pour 250ml boiling water into the bowl together with 25ml of lime juice and let it set. After about five minutes, the couscous will have absorbed all fluid. Stir everything together and arrange the couscous on two plates.

Top the couscous with the onion-prunes-walnuts magic and spread the dish with some feta cubes. You will love it, promise.

Hardly anyone in Germany knows about this Mexican holiday but Nate told me it is a very important drinking day for Americans. 1862 Mexican troops had defeated a larger French army. That of course is important only to Mexicans. Still, Americans think it is a nice occasion to drink Tequila. Nate thinks it is a nice occasion to create a new recipe that fits his beloved Pico de Gallo. I agree. So we invited Steffi over and this was our menue at one glance:

Pico de Gallo is quite an easy salsa to make. Chop up
  • 2 white onions
  • 6 tomatoes
  • a bunch of fresh cilantro and
  • Jalapeños
and mix everything with the juice of 2 limes and salt. That's it and super tasty.

  • 1 1/2 Tassen Maismehl
  • 1 rote Zwiebel, kleingehackt
  • 2 Eier
  • etwas frischer Koriander, gehackt

It is harder to describe Nate's creation since it looks like a burger but is vegetarian. Let's call it a Cinco de Mayo burger. Mix together in a bowl
  • 1 can of kidney beans (400g), rinsed
  • 1 1/2 cups of cornmeal
  • 1 red onion, chopped
  • 2 eggs
  • some fresh cilantro, chopped
  • 4 tbsp milk
  • 1 tsp of each cayenne pepper, cumin and oregano
  • salt and pepper
Use a fork with wich you will also crush about half of the beans. Your burger material is ready when you can form patties out of it. Those get fried in a hot pan with plenty of cornoil. Make sure both sides get a nice golden brown color. We complemented the burgers and the Pico de Gallo with gently roasted green pepper, seasoned with smoked salt and black pepper. The night was yummy!

Kaffee

Coffee. I love this word. It instantly puts my brain into a state of pleasant anticipation for the smell of this steaming and stimulatory beverage. While my computer is booting up at work in the morning, hot water is already boiling for the french press. I love the sound of my teaspoon digging into the ground coffee in my jar. And I love the sound of the hot water pouring into the french press. Steam obscures my sight and even before my glasses are clear again I can smell delicious coffee. Wonderful. I drink my coffee black, no sugar, no milk. I don't want anything to disturb the full flavour of South American or Arabian coffee. Do you love coffee this much, too?
